Miso eggplant
A very simple eggplant recipe, low in fat and calories, with delicious umami flavors. This dish is so rich and meaty that it’s hard to believe it’s vegan!

Vegetable oil for frying and frying
50g brown miso
100g of couscous
1 red pepper

½ small packet of coriander, chopped leaves
